Pumpkin Bread Ingredients
1 Box Trader Joe’s Pumpkin Bread & Muffin Mix
2 Eggs
½ Cup of Extra Virgin Olive Oil
1 Cup of Water
1 15oz Can of Trader Joe’s Organic Pumpkin
1 tsp Cinnamon (optional)
1 tsp Nutmeg (optional)
Pumpkin Bread Directions
Preheat your oven to 350 degrees.
You’re only going to need one large bowl. Start by whisking the two eggs, then add in the oil and water. Whisk all three ingredients together until they’re blended well.

Now for a perfectly delicious pumpkin bread, you would just add the mix and be done. You would pour the batter into one or two of your bread pans, put it or them in the oven, and wait an hour for some pumpkin-y goodness. But come on, you want to have some real pumpkin in there, right? Load up on some Vitamin A, it’s good for you.
While the boxed recipe doesn’t call for any extra pumpkin, trust me, it makes all the difference. And don’t be bashful. Add the whole can of Trader Joe’s Organic Pumpkin. All 15oz. Not a half a cup. A whole can. Blend the pumpkin well with a wire whisk.
Extra Cinnamon and Nutmeg Make This Even Better
Finally you’re going to add the Trader Joe’s Pumpkin Bread & Muffin mix. Don’t add it all at once. Add a third of the mix and then blend, another third and then blend, the last third and then blend. If you want extra spicy goodness, add a teaspoon of cinnamon and a teaspoon of nutmeg to the mix, but that’s optional.
Now you’re almost done! Pour the batter in your favorite bread pan and put it in the oven. Let the bread bake for exactly one hour, then take it out of the oven. Test the inside of the bread with a toothpick or knife. If the instrument comes up clean, then it’s ready! Let it cool for ten to fifteen minutes, then give it a try.
